Beyond Burgers: Outdoor Cooking for Every Occasion

Beyond Burgers: Outdoor Cooking for Every Occasion

Outdoor cooking becomes much more interesting once the barbecue stops being reserved for burgers and sausages. Different equipment, temperatures and cooking styles can turn the garden into the setting for everything from a quick family supper to pizza with friends or a long, slow weekend cook.

The aim is not to make every meal complicated. It is to match the occasion to the right technique and use the outdoor cooking equipment you have well.

A relaxed family dinner

For an ordinary evening, speed and simplicity matter. Vegetables, chicken, fish and steaks can all be cooked directly over heat without turning dinner into an all-day event. A gas grill in an outdoor kitchen makes it easy to start quickly, while charcoal offers a different experience if lighting and managing the fire is part of the enjoyment.

A nearby outdoor dining set changes the flow too. Food can move straight from grill to table, and the cook remains part of the evening rather than disappearing indoors between each course.

When steak is the main event

Steak rewards attention to heat, timing and rest. A ceramic Kamado gives you the flexibility to cook directly over charcoal or set up different heat zones, while a gas grill provides predictable control and quick adjustment.

If you want to go deeper, our guides to grilling the perfect steak and reverse searing explain two different approaches rather than pretending there is only one correct method.

Pizza night with friends

Pizza turns outdoor cooking into a social occasion because everyone can be involved in choosing toppings and pizzas cook quickly once the oven is at temperature. A dedicated pizza oven provides the intense heat and cooking surface needed to make that style of meal feel genuinely different from using a domestic oven indoors.

The Capitano Pizza Oven uses wood fuel, a refractory stone cooking base and stainless-steel chamber. Prepare toppings before guests arrive and keep the menu relatively focused; a few well-chosen combinations usually make the evening run more smoothly than trying to offer every possible ingredient.

A long, slow weekend cook

When time is part of the pleasure, charcoal comes into its own. A ceramic grill can be set up for indirect cooking at a stable temperature, giving larger cuts time to become tender and allowing suitable smoking wood to contribute flavour.

This is not the same as owning a dedicated smoker. Our guide to choosing outdoor cooking equipment explains how low-and-slow cooking fits into the broader capabilities of a Kamado.

Cooking for a larger group

As guest numbers rise, workflow becomes as important as the cooking method. You need preparation surface, somewhere for finished dishes and enough storage that utensils and ingredients are not constantly being carried in and out of the house.

That is where an outdoor kitchen earns its space. The kitchen can become the practical hub of the gathering while specialist equipment such as a Kamado or pizza oven adds another cooking style where it genuinely contributes.

Make vegetables part of the plan

Outdoor cooking is particularly good at adding colour and texture to vegetables. Peppers, courgettes, aubergine, corn and mushrooms all respond well to high heat, while larger vegetables can be cooked more gently away from the fiercest part of the grill.

Do not treat vegetables simply as something to fill the space beside the meat. Marinades, herbs, charred edges and good seasoning can make them a central part of the meal and give guests with different preferences something genuinely considered.

Think about serving before you start cooking

Hot food loses its appeal quickly if there is nowhere ready for it to go. Have boards, platters and serving dishes organised in advance, particularly when several foods finish at different times. Our guide to serving planks explores how presentation can make an informal outdoor meal feel more deliberate without becoming formal.

Let the occasion determine the equipment

A family dinner, steak night, pizza party and slow weekend cook do not need to be forced through the same formula. Use the equipment that makes each occasion easier or more enjoyable.
