How To Grill the Perfect Steak
An outdoor grill is a fantastic tool for grilling steaks. Its key advantages—precise temperature control and instant heat—make it easy to achieve a perfect, repeatable result every time. By following a few simple steps, you can create a steak with a beautiful seared crust and a juicy, tender interior.
Step 1: Prepare Your Steak
The journey to the perfect steak begins well before it hits the grill.
- Choose the Right Cut: Start with a quality cut of meat like a Ribeye, New York Strip, or Sirloin. Look for a steak that is at least 1-1.5 inches thick.
- Bring it to Temperature: Remove the steak from the refrigerator about 30 minutes before grilling. A room-temperature steak cooks more evenly, preventing the outside from burning before the inside is done.
- Season Generously: Keep it simple. Pat the steak dry with a paper towel and then coat both sides generously with coarse salt and freshly cracked black pepper. This simple seasoning is all you need to create a fantastic crust.
Step 2: Set Up Your Grill for Two-Zone Cooking
This is the secret to a perfectly cooked steak. Two-zone cooking allows you to get a high-heat sear without overcooking the inside.
- Preheat: Turn all of your burners on to high, close the lid, and let the grill preheat for at least 10-15 minutes. A hot grill is essential for a great sear.
- Create Zones: After preheating, turn one or two burners down to low or off. This creates a hot "searing zone" and a cooler "finishing zone."
Step 3: Sear for the Perfect Crust
Now, it’s time to get that beautiful, caramelized crust.
- Place on the Hot Zone: Lay the steak directly over the lit, high-heat burners or charcoal.
- Don't Touch: Close the lid and let the steak sear without moving it for 2-4 minutes. This is critical for developing a deep brown crust.
- Flip Once: Use tongs to flip the steak. Sear the other side for another 2-4 minutes.
Step 4: Finish to Your Desired Doneness
After the initial sear, move the steak to the cooler side of the grill to finish cooking.
- Move to the Cool Zone: Place the steak over the burners that are off or on low. Close the lid. This allows the steak to cook through gently without burning the exterior.
- Check the Temperature: The only way to guarantee a perfect result is to use an instant-read meat thermometer. This prevents you from overcooking the steak and losing precious juices.
| Doneness | Internal Temperature |
| Rare | 49-52°C |
| Medium-Rare | 54-57°C |
| Medium | 60-63°C |
| Medium-Well | 66-68°C |
Step 5: The Golden Rule: Let It Rest
This is the most important and often overlooked step.
- Rest: Once the steak reaches your desired internal temperature, remove it from the grill and place it on a clean cutting board or plate. Cover it loosely with aluminium foil.
- Wait: Let the steak rest for 5-10 minutes. This allows the juices, which were pushed to the center by the heat, to redistribute evenly throughout the meat, ensuring every bite is tender and juicy.
Slice and enjoy your perfectly grilled steak!
